The sea basin of Marennes-Oleron is perfectly suited to the development and growth of oyster farming. The flat, shallow basin is protected by the natural sea wall of the Ile d'Oleron. The temperate climate is ideal, and the constant supply of fresh water from the Charente, Seudre and Gironde rivers retains the low salinity in which the oysters thrive. Today, 50 per cent of French oyster production comes from Marennes-Oleron.
